• 8 thin chicken cutlets (1 1/2 pounds total) kosher salt and black pepper 1/4 cup all-purpose flour 2 large eggs, beaten 2/3 cup bread crumbs 1/4 cup grated Parmesan cheese 3 tablespoons olive oil 1 24-ounce jar marinara sauce 1 pound fresh mozzarella, sliced
How to Make It
Heat oven to 400º F. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper.
Place the flour and eggs in separate shallow bowls; in a third shallow bowl, I like to use combine panko crumbs but you could use bread crumbs if you’d like and Parmesan. Coat the chicken with the flour, then dip in the eggs (letting any excess drip off), then coat with the bread crumb mixture, pressing gently to help it adhere.
Heat the oil in a large skillet over medium-high heat. Cook the chicken in batches until golden brown, about 2 minutes per side.
Pour the marinara sauce into a large, shallow baking dish. Top with the chicken and mozzarella.
Bake until bubbling and golden brown, 20 to 25 minutes.
Upon arrival we had not booked any reservations so when we showed up they were at capacity. The soonest that they could let people in with 8 PM and our flight was at 6:45pm. So Ted worked his magic and asked the guy what do we need to do to get in that’s when the nice gentleman at the counter told us that there was a luxury room This room included an entrance to an exclusive lounge, private changing area, use of towels, bathrobe, slippers and two drinks per person. Ted knew this was something I was really looking forward to ending the trip with so with that being said we booked it. And I have to say he admitted several times that he was glad that we did it.
A piece of advice that I would offer anyone is definitely know when you want to go and book a reservation. I could not believe the amount of people that were there.

• The next morning we visited the my favorite place- the glacier lake at Jokursarlon. When we were finished here we stayed to head back west to Selfoss to sleep so the following morning we could do Grindavik and blue lagoon
We woke up super early on day 2 and headed straight to Selfoss. But first we wanted to stop for breakfast. We found a little spot that had a small grocery store inside with a cafe. The only thing available at 8 am was hotdogs and broccoli soup.
When we first arrived we walked close to the waterfall and thought was that’s beautiful. We were able to get a couple photos and a rainbow showed up and we were just about to leave when somebody said that we definitely had to go up the stairs to the top There were 11 more waterfalls from up there
The next stop was VIk and the famous “black sand beach”
We planned a four day trip to Iceland and before we left we mapped out exactly where we wanted to stop along the way. Planning is key for this trip because there is so much to see and do!! This trip was at the end of summer so the weather was in the 50’s so as long as you bring layering pieces and a weatherproof jacket you will be comfortable.
We flew on a direct flight from Miami to Keflavik airport. We arrived at 4am rented a car and went to Reykjavik to have breakfast before we started our long trek through Thingviller National Park.
Park in the lot, and then take a short hike down a rocky trail that leads you to the waterfall. I would definitely recommend hiking boots since it’s wet and slippery! There is a beautiful wooden walkway at the end that leads you to the waterfall. After you’ve taken your selfies, Snapchats, IG stories and Boomerangs it will be time to hit the road and head to Geysir.
Along the way you’ll want to pull over every second because the scenery is so picturesque.
I made you guys a map below with all of the places you should stop along the way, and keep in mind your iPhone GPS will work totally fine in Iceland, as long as you have data. May I suggest seeing if your car rental has a wi-fi add on. So, have a big breakfast, fill up the car with gas, and set your GPS for Öxarárfoss!
The Golden Circle is a 240 km loop in southIceland that starts in Reykjavik, and goes through some of Iceland’s most beautiful attractions. Including stops it takes about 6 hours to drive, which is the perfect distance to do in a day, and allows you to check off waterfalls, Geysir, and volcanoes from your list!
Geysir, sometimes known as The Great Geysir, is a geyser in southwestern Iceland. Geysir has a nice rest stop including a gorgeous store with everything wool and a cafe overlooking the Geysirs and nice public restrooms.
The nearby geyser Strokkur erupts much more frequently than Geysir, erupting to heights of up to 30 metres every few minutes. Strokkur’s activity has also been affected by earthquakes, although to a lesser extent than the Great Geysir.
Next up is Gullfoss, one of the largest waterfalls in Iceland. You’ll pass little farms with very friendly horses, and promise me you’ll stop to say hello! When you arrived you can walk down some stairs and get an eye view of this very large and powerful waterfalls. If you are feeling up to it you can take slight hike (which you make get a little wet) so you can get a birds eye view.
Gullfoss is a waterfall located in the canyon of Olfusa river in southwest Iceland. Gullfoss is one of the most popular tourist attractions in Iceland.
By the time we were finished at Gulfoss it was time to drive south to our first AirBnB in Hvolsvöllur.

I traced Lucca’s hand and made a pattern. Then used that to trace red construction paper. Then we glue the hands on either end of a white strip of paper. Write whatever you wish.
We went to my friends sons 1st birthday last weekend. She always throws great themed parties. Before kids she would throw an annual Halloween party at night. Now the themed parties continue for the children’s birthdays. One of our favorite holidays are halloween. We had such a blast at Mikey’s 1st birthday, Cowboys & Indians. There were pony rides, tee pee’s, petting zoo, bounce houses and cotton candy.
Fall is my favorite time of the year. For us it means less humidity and opening up our windows to let that fresh air in. This year we went to a different pumpkin patch, flamingo gardens nursery. They had hayrides, Mater from the movie Cars, Herbie, and some darn good BBQ. I carved a pumpkin for Lucca and tomorrow I’m going to let him carve his very own mini pumpkin
Lucca found a pumpkin that was a little banged up and told me “pumpin boo boo”
